You might say it was a serendipitous accident (perhaps fate), when best friends Benny Avramides and Tommy McIntosh casually agreed to manage an event that a well-established, high profile, and respected caterer had pulled out of at the last minute.
Benny, just back from London, and Tommy, cutting his teeth in the Melbourne hospitality scene, assembled an eager crew of like-minded individuals and delivered an almighty soiree for the thankful client at their beautiful private residence.
Tommy Collins was born.
Word of mouth spread, and the list of private and corporate clients grew, as did Tommy Collins’ reputation for delivering en pointe and innovative brand of genuine hospitality. For stability Tommy Collins expand their hospitality portfolio, opening a series of successful cafes, restaurants, and in-house corporate catering contracts.
In addition, Tommy Collins is consistently awarded exclusive catering rights to annual major events, including Portsea, Flinders and Twilight Beach Polo’s, Caulfield Cup Carnival, Dinner en Blanc, Melbourne Fashion Festival and Good Food Month, just to name a few.
Tommy Collins has grown from strength to strength; and with the acquisition of Bon Vivant Group, a strategic move which developed their casual dining & bar sector presence, greatly reinforced the beverage component of the group.
The same strategic approach was taken when Tommy Collins built Hamptons Bakery and Ladybird Cakes, which added further expertise and depth.
Tommy Collins brings nearly two decades of hospitality experience to the table, with a celebrated history of successful major events, on-trend venues, customised creative catering and significant retail operations.

I first experienced the Tommy Collins magic at VAMFF in 2019. Our team decided at the last minute to use their pop-up bar as a meeting point to entertain clients, without contacting the TC team to advise we were doing so.
The crew very quickly realised that there were going to be quite a few of us attending, and immediately allocated a staff member to cater to our every need. Staff assisted with quick service as many of our guests didn't have much time before each show and then organised for us to return after each show for drinks as well.
The TC team is exceptional. Their hospitality service is second to none.
